Yummy Chocolate Pie (my new favorite)!
Yummy Chocolate Pie
4 T. cocoa
1 C. sugar
1 1/2 C. milk
3/4 tsp. vanilla
1/3 C. flour
1/4 tsp. salt
2 T. oleo
Separate eggs. Put egg yolks into a 3-quart saucepan. Put egg whites into
a medium mixing bowl. Add sugar to egg yolks and mix well. Add cocoa and
mix well. Add flour and salt and mix well. If it is hard to mix, add a
little of the milk a tablespoon at a time. Mix well. Then add the rest of
the milk a little at a time until it is all mixed in. (Carol's note: I
used a whisk to mix in the milk and added the vanilla at this point.) Then
add oleo and cook on medium high until it thickens, stirring constantly.
Pour into baked pie shell and top with meringue. Meringue: Beat egg whites
until they form a peak. Add 3 tablespoons of sugar, 1 at a time and beat
until stiff. Put on top of chocolate pie and put in 350 degrees oven for
10-15 minutes or until golden brown.
