Rotel Dip
(a regular feature at pot-lucks, get togethers, etc.)

Really hard. ;-)

1 lb. Velveeta or I have used up to 1 1/4 pounds
1 can Rotel tomatoes and chiles (I used the diced milder variety.)

Cube the Velveeta and place in a 1 1/2 quart casserole.
Add the Rotel, and stir together.
Cover (I use a paper plate) and zap at full power for 2 1/2 minutes.
Stir, re-cover and zap for another 2 1/2 minutes.
Remove from microwave.
Stir until smooth. Serve with chips (preferably corn chips or tortillas.)
