All Time Favorite Mexican Casserole 1 lb. lean ground meat (I use ground chuck)
2 T. minced onions (dried)
1 tsp. fresh garlic (minced)
1 can Rotel tomatoes/green chilies
1 can cream of mushroom soup
2 cans pinto beans/ Ranch Style (not drained)
12 white corn tortillas (break into fourths)
3 T. Brookes Mexican Spice Blend (or any brand mexican seasoning)
2 C. shredded extra sharp Cheddar cheeseBrown ground meat in large skillet...crumble..add onions and garlic...add tomatoes, soup, beans and mexican seasoning. In a 9x13-inch casserole pan, sprayed with Pam, put in half of the tortillas...1/2 of the meat mixture..then layer tortillas and meat again. Bake 375 degrees for 30 minutes..take out of oven and add cheese..then bake 5 minutes until cheese is melted. Serves 6
