ATKINS SOY BREAD
6 lg eggs -- separated
1/4 tsp cream of tartar
2 tbsp whipping cream -- (optional)
1/4 cup Hodgsons Mills Soy Flour
1 tbsp vital wheat gluten
1 tsp guar gum
2 tbsp splenda
Beat the egg whites with the cream of tartar until stiff but not dry....
In a seperate bowl mix yolks with splenda and optional cream...Fold about 2Tbsp of the beaten whites into this to lighten it up some before you pour it gently into the egg whites...Do not fold yet....Sift together the flour, vital wheat gluten and guar gum and sift this over the egg mixture....Fold all this together...Layer into a loaf pan sprayed with Pam...Bake at 350°F for 30-45 min depending on your oven....
