Rice will stretch ANYTHING nicely.
One of our family's favorites is what our children dubbed "Magic Pot" long ago.It can be cooked in a clay pot in the oven or in a slow cooker.
Take as many pieces of chicken as your family will eat.
Cut up onions, carrots, season to taste...garlic/or powder a bit of basil or whatever your clan enjoys.
Uncooked rice that will feed your bunch and add broth to cook in maybe a broth/water mixture - water will do well also.The rice will season the pot very well and should cook in about an hour.
A small amount of meat will flavor any rice dish very well.
When I buy rolled oats, I enjoy getting the OLD FASHIONED kind..usually generic. It seems to be hearty.
Different varieties of legumes are a nutritous choice, if you make cornbread or your favorite bread. If you eat pork, they may be flavored with a small smoked portion, just enough to flavor.
Soups are nutritous, and if it's hot there, make the cold variety, again along with any breads that you could make to go with.
Cook and bone chicken, make chicken salad, stuff into a half of pita bread with salad and put some alfalfa sprouts (that you've grown) and a few slices of tomato on top. I suppose a tortilla might do OK, but pita bread does very nicely. You can make pita bread, if you wanted.
You will do very well with whatever kind of menu you plan, Dear Heart.
