
Bean & Orzo Spinach Salad

2 15-ounce cans black beans, rinsed and drained
2 1/4-ounce can sliced ripe olives, drained
2 med. tomatoes, seeded and chopped
1/4 cup chopped green onions
1/4 cup chopped fresh cilantro
1 cup chopped jicama (I added this for extra crunch)
2 T olive oil
2 T lime juice
1/2 t ground cumin
1/2 t oregano
1/4 t pepper
1/8 t salt
1 1/2 cups cooked rosamarina (orzo) pasta (shaped like rice)
4 cups chopped fresh spinachMix beans, olives, tomatoes, onions, cilantro, and jicama in a large bowl. Mix olive oil, lime juice, cumin, oregano, pepper, and salt. Toss w/ bean mixture. Stir in pasta. Serve over spinach.
