CREAMY CLAM CHOWDER
1/2 lb. bacon (fry and drain in soup pot)
1 small onion, diced
2 large carrots, diced
2 stalks celery, diced
4 C. potatoes, diced (frozen potatoes work well-- the diced kind)
1-2 cans clams with the water
4 C. water
Simmer for about 15 minutes or until veggies are soft.
1 1/2 C. milk
1 can evaporated milk (not sweetened)
3 T. corn starch (mixed in a tiny amount of cold water)
Bring to a boil and then reduce heat. Cook for about 5 minutes
I season with salt and pepper and a seasoning called "Old Bay Seasoning". I know that it is found in the east but I'm not sure it's in the west.
