Homemade granola

In a roasting pan, mix together the following:8 cups old fashioned rolled oats(or any combination of rolled wheat, rye, barley, or 4-grain cereal); 1 cup raw wheat germ; ½ cup natural brown sesame seeds; 2 cups unsweetened coconut; ½ cup raw sunflower seeds. Note: The last four ingredients may be substituted by any combination of your favorite nuts, etc. Cover and bake for about 20 minutes, or until lightly brown. BE SURE TO STIR FREQUENTLY, so that it toasts evenly and down not burn. Add the following:1/3 cup cold pressed safflower oil; 1 cup honey or maple syrup; l Tbsp. vanilla; Dash of cinnamon & nutmeg. Mix thoroughly, cover and bake for about 10 minutes more, stirring frequently. Let cool completely, then
break up any chunks that may have formed. Then, sit down to a bowl of fine homemade granola.This is really good - much better than the store-bought.
