Barb's Accidental Low-Fat Waffles.

2 cups sifted all-purpose flour
4 t. baking powder
1/2 t. salt
2 cups whole millk
3 well-beaten eggs.
Chopped nuts.

Start heating waffle iron as manufacturer directs. Sift flour, baking powder
and salt Together. Put aside.

Combine milk and eggs. Add sifted dry ingredients. Combine at low speed,
with hand beater or mixer, and then beat at high speed, beat until smooth.

When waffle iron is ready to use, pour batter into center of lower half until it
spreads about 1" from edges. Sprinkle with chopped nuts to taste. Bring
cover down gently. Cook as manufacturer directs, as crisp as you like. Do
not raise during baking.

When waffle is done to your satisfaction, lift cover and loosen waffle with
fork or knife. Serve at once. Reheat waffle iron before pouring in next
waffle. Makes 4-6 large square waffles (four small sqaures each).,
depending on size of your waffle iron.

O.K. So it's not fat-free, but it sure has less fat than it would with the extra
2 sticks of melted butter the original recipe called for.
