
Wheat-free/dairy-free/optional egg free squares

This was passed on to me from my friend Sharon. I use it to make different cookie squares for my dd who has multiple food allergies and can't have regular cookies, desserts, or muffins. Sharon's Wheat-free/dairy-free squares
1/3 cup olive oil
1/3 cup to 1 cup sugar
1 egg (optional)
1/2 to 1 teaspoon saltOptional (instead of egg): 1 teaspoon guar gum or xanthan gum (helps to hold flour together so squares are less crumbly)
2 cups pear sauce, apple sauce or fruit of choice (i.e. 2 bananas)May need to add water with fresh fruit to make batter easy to stir and blend with flour.
Cheryl's note: my dd likes them best with blueberries "muffins" or raisens "cookies"
2 to 2 1/2 cups flour (oatmeal, rice flour or other gluten free flours. Can use several different flours blended together).
Cream oil and sugar. Add egg and beat well. Stir in salt (and guar gum), add fruit and flour alternately to a consistency that is not too runny or too thick. Pour into a greased 8x8 or 9x9 pan.
Bake at 350 degrees for approx 35 min.
