4 cups of dry milk powder (rice or soy milk powders may be substituted)
3/4 cup of lecithin powder or granules
3 Tbsp. pure vitamin C powder
2 Tbsp. ground ginger
3 Tbsp. cornstarch or arrowroot powder
Mix all of these together in your mixer equipped with the wire whips. Mix until well blended. Store in a container with a tight lid. Refrigeration is not necessary but is preferred for longer periods of storage. Use in bread recipes at room temperature. 3-4 heaping Tbsp. is adequate for most 4-6 loaf size recipes.
