Indian Curry Chicken
(this is a quadrupled recipe)
2 Tbs. vegetable oil
3 c. diced onion
3 c. diced celery
12 Tbs. flour
3 c. chicken broth
3 c. tomato juice
1 1/2 tsp. Worcestershire sauce
6 tsp. curry powder
1 tsp. salt
1/2 tsp. pepper
8 c. diced cooked chicken breasts
10-16 c. cooked riceToppings: mandarin oranges, coconut, raisins, peanuts, bananas. (I put each one in a separate bowl in the middle of the table and let each one make thier own plate)
Heat oil in pot over medium heat. Cook onion and celery 2 minutes stirring occasionally. Stir in flower until vegetables are well covered. Gradually stir in broth and tomato juice. Cook stirring occasionally until it is smooth and begins to thicken. Add rest of
ingredients, excluding rice. Heat through. Serve over rice with toppings of your choice.
My family LOVES this! Even my picky 9 year old! They love getting to “build” their own plate of food.![]()
