
Lori's Green Bean Salad with Vinaigrette

Drain your beans and place in serving bowl. Add some finely minced onion, about half of a medium one. Add a bit of chopped pimento for color, if you like. For 2 qts. beans, make a homemade dressing in the following proportions:
1/4 c. vinegar -- any kind, I like red or white wine
1 T. Dijon mustard or 1/4 t. dry mustard
1/2 t. salt
several grinds black pepper
2 t. dried or 2 T. fresh minced herb -- good ones for this salad are dill or basilMix ingredients in a small screw-top jar. Add 3/4 c. olive or vegetable oil (or a combination.) Close jar and shake well. Pour over the vegetables and stir gently to coat. Chill. Stir again before serving. Serves 8-10
If you're really pressed for time, simply drain your beans and stir a small bottle of regular italian dressing into them. Chill. You'll still get compliments!
