Lori's Creamy Three or Four or More Bean Salad
1 reg. can (15 oz?) green beans, drained
1 reg. can wax beans, drained
1 reg. can light or dark red kidney beans, rinsed and drained
1 reg. can garbanzo beans (chickpeas), drained
1 small red onion, peeled, halved lengthwise, and thinly sliced
1 small bottle creamy Italian dressing
cheddar or other cheese, in small cubes, optional
The beans I use are listed in order of importance, in my opinion. You could certainly skip the wax beans and use all green since you want to use some up. Sometimes I also add a can of rinsed and drained black beans.
Gently combine the beans and onion in a bowl. Stir in the salad dressing. Chill. At serving time, cheese cubes may be added to make a heartier salad. This is especially attractive served in a pretty lettuce-lined bowl. Serves about 8.
