1 (12 oz.) tub Cool Whip, thawed and divided in half
2 pkg. vanilla or banana instant pudding (Carol's note: I used vanilla - 4-serving size.)
1 can chocolate frosting, microwave 30 to 60 seconds just before use (Carol's note: I used Milk Chocolate frosting.)
Prepare 1 box pudding as directed. Mix with 1/2 tub of Cool Whip. Line bottom of 12x9-inch Pyrex dish with crackers. Cover crackers with pudding/Cool Whip combination. Cover with a layer of crackers. Make other box of pudding as directed. Mix with other 1/2 of Cool Whip. Pour over cracker layer. Cover with crackers. Pour melted chocolate frosting to completely cover crackers.
Best when chilled overnight. The recipe notes, "The crackers disappear. Tastes just like eclairs; no one can tell ingredients."
