Potato Topped Sloppy Joe Casserole

1 lb ground beef
1 can sloppy joe sauce (15 oz)
1 bag frozen mixed veggies
2 cups water
1/4 ts garlic salt
2 cups instant mashed potato flakes
1/4 cup sour cream
1 egg beaten
2 ox (1/2 cup) shredded cheddar cheese

Brown ground beef and drain. Add sauce and veggies.

Meanwhile, bring water and salt to a boil. Remove pan from heat and add potato flakes. Stir until well blended. Add sour cream and egg; mix well.

Put beef mixture into a shallow 2 quart cassarole and spoon potato mixture to cover. Sprinkle with cheese. Bake at 325 for 25-30 minutes or utnil potatoes are set. If desired, sprinkly potatoes with chopped fresh parsley.
