Bread Machine Bagels

1 1/2 tsp brown sugar
1 tsp salt
1 cup warm water (or cold if making overnight)
2 cup bread flour
1/2 cup ww flour
2 1/2 tsp yeast

Dipping water
2 cups hot water
2 Tbs baking soda

Set machine to dough cycle. Let rise in machine. Take out and flatten a bit. Cut lengthwise into 5 strips (or more for skinnier bagels). Roll strips between hands for a bit and dip into water while pinching ends together to shape bagel.

After dipping bagels in water put on greased cookie sheet (can sprinkle with corn meal). Take an egg wash (egg yolk and 1 tsp water) and brush top of bagels. Can sprinkle with sesame seeds or poppy seeds. No need to let rise. Put in preheated 450 degree oven for 12 minutes.
