Lighter Sweet Country Corn Bread

1 C. skim milk
2 T. margarine, melted
2 egg whites
3 tsp. low-sodium baking powder
1 1/2 C. yellow cornmeal
1 C. all-purpose flour
1/2 C. granulated sugar

Preheat the oven to 400. Grease the bottom and sides of an 8x8 inch pan with cooking spray.
In a large stainless steel mixing bowl, beat the milk, margarine, and egg whites together. Add the cornmeal, flour, sugar, and baking powder all at once and stir just until moistened (the batter will be lumpy). Pour the batter into the pan and bake for 20 to 25 minutes or until golden brown and toothpick inserted in center comes out dry
