
CucumberYogurt Dip

1qt plain yogurt (not low fat)
2 cucumbers, grated
1 clove garlic
Salt and pepper to tastePut a dampened piece of cheese cloth in a colander. Dump the yogurt in it, and cover the top with the corners of the cheese cloth. Let drain for several hours or overnight (you do not have to refrigerate while draining). A couple of hours before mixing, grate and drain the cucumbers. Let them drain until ready to mix. Chop and smash the garlic until as fine as possible. Mix all together and add salt and pepper to taste. The longer you drain the yogurt and cucumbers, the better chance you have of getting a nice thick dip.
Serve with sesame crackers.
