Oyster Casserole

Scalloped Oysters
1 stick butter
1 1/2 cups cracker crumbs (saltine, soda, or oyster crackers, crushed)
1 1/2 -2 pints of oysters
salt
freshly ground pepper
1/4- 1/2 tsp freshly grated nutmeg
4 Tbs ooyster liquor
1 cup cream or milk

Preheat oven to 425 degrees.
Butter a casserole or baking dish with 1 Tbs of the butter. Use a 8 or 9 ich square casserole or any heatproof dish deep enough to hold 3 layers. Place about 1/3 of the cracker crumbs in the dish.

Lay half of the oysters on top of the crumbs. Sprinkle these with a little salt, pepper and nutmeg. Pour o 2 Tbs of oyster liquor and 3 Tbs of cream. Dot with 2 Tbs butter.

Add another 1/3 layer of cracker crumbs. The remaining half of oysters. Repeat steps of adding seasonings, liquids and butter.

Cover with remaining crumbs. Sprinkle with the rest of the cream, more salt,pepper & nutmeg. and dot with remaining butter.
Bake for 30 minutes.

Makes 4-6 servings.
