Pumpkin Pie Puree

Cut your pumpkin in half, scoop out the seeds, then lay it cut side down on a cookie sheet (or you could microwave it), once cooked let cool (or not) and scoop out the flesh and process in a food processor. Then measure enough for making 3 large pies in a freezer bag and freeze it. Voila! Pumpkin measured when needed.
