DanaO's Cheese Sauce
To make a thick cheese sauce...
2 tbsp. butter
2 tbsp. flour (whole wheat pastry is good)
2 cups milk
1-2 cups grated cheddar cheese
Melt butter in saucepan over med. heat
Add flour and stir constantly
This will become like a very thick paste, just keep stiring and don't let it burn. It can brown slightly but that only means the flour is being cooked. This should take approximately 5-10 minutes. This mixture is called a "roux" and can be used for many sauce bases.
Slowly add milk while whisking, continuing to whisk contantly.
Once all milk has been added, add salt and pepper and grated cheddar. Stir until cheese has melted.
Use as is over fresh vegetables or add to cooked broccoli for a nice soup.
